Product Name: KH10   

Applications: Agar Jelly

Dosage: 2-3%   

Molding type: Mold type   

Taste: elastic and crisp

 

Advantages

Good heat resistance, can withstand sterilization at 95for 30 min. High adaptability in industrial line, have rich application scenarios in catering line.


Usage 1:

1) Prepare 265g purified water at 80, add 0.1g of sodium citrate;

2) After blending 6g of KH10 and 45g of sugar, slowly sprinkle into the above hot water and stir for 15-20min until it is dissolved into a uniform viscous solution without particles;

3) Add 2g of 3% calcium chloride solution and mix well under heat preservation;

4) After mixing, drip into the mold and cooling molding.

Taste: KH30 elastic and crisp, KH31 elastic and tough, KH60 soft waxy

Usage 2:

Drop the above KH30/KH31/KH60 solution into 2% calcium lactate or 0.2% CaCl2 solution and cooling molding.

 

Note

1Manufacturing method of external protective liquid   

Sugar: water: calcium lactate=40:59:1

Citric acid: adjust PH to around 3.4

Preservative: appropriate amount

2Recommended solid content: 70%

3Sterilization conditions: NMT 95for 30 minutes, to prevent the crystal ball from being squeezed by external force during high temperature sterilization.
